Can I replace the approver in an active approval workflow?
You cannot replace the approver directly in a running workflow. Here is the solution.
You cannot replace the approver directly within a running approval workflow. If an approver is on vacation, for example, the orders remain with this approver, even if you enter a new approver.
Solution
Note: If a deputy approver was already set in the rule when the orders were submitted, the deputy approver can approve the pending orders at any time. Disabling the workflow is not necessary in this case. A deputy approver added later only applies to new orders.
To continue the approval workflow anyway, use the following option:

Disable the approval workflow

All currently open orders are rejected automatically.

Update the rule

Enter the correct approver in the rule.

Then enable the approval workflow again in the overview in the Activated column.

Place the orders again

Shoppers open their rejected order in the order history and add the articles to the cart again via Reorder. This creates a new order.

These orders then go to the new approver.
